Meaty Spanish Rice


This was a pretty good dish.  Of course, I used ground turkey instead of ground beef or ground round.  What made it even better for me, was to make it into a burrito.  I just added some taco sauce, cheese (of course), and corn then I was all set.  Fix it up however you wish.  Hope you enjoy!

Meaty Spanish Rice

Ingredients:  1-1 1/2 lb of ground Beef, Round, or Turkey
                   28oz can whole Tomatoes, undrained & chopped
                   1 1/4 cup Instant Long Grain Rice
                   1 can Black Beans, drained & rinsed
                   1 tsp Onion Powder
                   2 Tbsp Chili Powder
                   Salt & Pepper to taste


  1. Brown ground beef or turkey in skillet.  Drain and return to skillet.

  2. Add onion powder, chili powder, tomatoes, juice from tomatoes (add water, if needed, to make 1 1/2 cups of liquid), salt & pepper.  Stir well and bring to boil.

  3. Add rice, cover, reduce heat and simmer 5 min or until rice is tender.

  4. Add black beans and heat through.
